Healthy Recipes

The olives and feta are a must. Any additional vegetables of your choosing would work well in this simple and delicious salad.
Diet Type: Sugar Free
Ingredients:
  • 4 oz. Feta Cheese
  • 10 oz. uncooked penne pasta
  • 1 teaspoon dried oregano
  • 1/4 cup red onion, minced
  • 1 lb. cooked shrimp, peeled
  • 1/4 cup pitted, chopped Greek black olives
  • 1 tomato, seeded and diced
  • 1/2 cup chopped parsley
  • black pepper to taste
  • 1 (7 oz. ) bottle roasted red pepper, drained, diced
  • 1/2 cup Vinaigrette dressing of choice
  • Serves: 4
    Cooking Time: Under 30 minutes
    Instructions:
    Bring 6 cups water to a boil in a large saucepan. Add penne pasta and cook according to package directions. Drain in a colander and rinse with cool water. Set aside. Combine cooked shrimp, dressing, tomato and oregano in a large bowl. Add pasta and all the remaining vegetables. Toss gently to mix. Cover and chill. Serve with crumbled Feta Cheese.
