| Orange-Quinoa Muffins |

Ingredients:

1 1/2 cups Quinoa flour |
| |
1/2 cup soy flour |
| |
1 tablespoon baking powder |
| |
1/4 teaspoon salt |
| |
1/4 teaspoon Orange Extract |
| |
1 cup apple juice |
| |
1/4 cup canola oil |
| |
1/4 cup maple syrup |

| |
Directions:
Preheat oven to 375 degrees.
Mix all dry ingredients together.
In a separate bowl, mix all
liquid ingredients together.
Stir wet into dry until just mixed.
Pour into paper-lined muffin tins and bake for 15-20 minutes.
